These were inspired by week 5 of the GBBO, which was entitled alternative ingredients.
I found these in a recipe book called Meals for Two (not sure how muffins fit into this but never mind) and they’re described as breakfast muffins.
2 tbsp honey
150 ml milk
1 large banana
175g self raising flour
1 tsp baking powder
25g ground almonds and 25g flaked almonds
Step 1. Mix melted margarine, honey, egg and milk in a jug.
Step 2. Put chopped banana, flour, oats, baking powder, ground almonds and flaked amonds in a bowl
Step 3. Pour milk mixture into bowl and mix, roughly. Don’t over-mix, in order to retain a fairly lumpy mixture which gives the muffins their light texture.
Step 4. Put into muffin cases (makes about 12) and bake on Gas Mark 6 (200C, 400F) for about 20 mins until golden.
These were really delicious and their wholesome nature made them a great elevenses snack, and popular with my Mum too.
