Party Ring Iced Biscuits

I picked up this recipe card in Tesco the other day, the biscuits are a simple yet tasty coconut biscuit and the icing is deceptively easy but makes them look just like party rings!

Pleased they resemble the picture!

For the biscuits;

50 g margarine
50 g caster sugar
1 tsp vanilla extract
100 g plain flour (although I ended up adding more flour than this to form a dough firm enough to work with)
50 g desiccated coconut
1 egg

For decoration;

Icing sugar
Various food colourings

Method: Whisk margarine, sugar and vanilla for 6 to 8 minutes with electric whisk, until pale and creamy. Add other ingredients and mix to form a dough.

When rolled out, the party ring shape is formed using two different sized circle cutters; a larger circle for the main shape and a smaller one to cut the middle out.

The biscuits are baked for 10 to 12 minutes on Gas Mark 4 and left to cool.

Party ring biscuits before icing

The icing is done by spreading each ring with a single colour, then drizzling over straight lines of a contrasting colour. Then, a cocktail stick is dragged gently, perpendicular to the icing lines to create a feathered effect. Contrasting bright colours look good, especially pink and yellow or lime green.

I was really pleased with how effective this fairly simple icing pattern looks and have since made a second batch to take to a friend’s Christmas party.
