Norwegian Apple Cake

In honour of Eurovision being on the television tonight, I’ve baked a suitably European cake. This is actually a staple bake in our household. Not because of any Norwegian roots, just simply because it’s quick to make and delicious.

2 eggs
200 g caster sugar
100 g margarine
150 ml milk (I used semi skimmed)
170 g self raising flour
3 apples

Step 1. Whisk the eggs and 175 g of the caster sugar until the mixture becomes thick.

Step 2. Put the margarine in a pan and melt. Add milk and bring to the boil.

Step 3. Add the boiling margarine and milk mixture to the eggs and sugar and mix.

Step 4. Sift in the flour and baking powder and fold in.

Step 5. Gently place the peeled, cored and sliced apple on top of the cake in lines. Don’t worry if some of it sinks a bit.

Step 6. Sprinkle 25 g more caster sugar over the top of the cake.

Step 7. Bake in a preheated oven on Gas Mark 6 for around 30 minutes.

Hopefully this will go down well at my friend’s Eurovision party tonight. Lets hope we don’t get null points!
