Pea Falafels

I know, I know … this is supposed to be a baking blog but everyone needs something savoury once in a while. And this is an extra-specially good savoury recipe or I wouldn’t be sharing it with you!

The idea of a pea falafel came from Cassie Best’s recipe here. I changed it radically so here’s my version.

Ingredients;      (Serves 2)

For the falafels;
400 g frozen peas
1 garlic clove, crushed
400 g can chickpeas
2 tsp cumin seeds
Zest of 1 lime

For the couscous;
40 g couscous
Tomatoes
Avocado
Fresh mint
A little lime juice

Natural yoghurt

Step 1. Thaw the frozen peas in a colander under the hot tap.

Step 2. Whizz the peas, chickpeas, garlic, 2 tsp cumin seeds, lime zest and salt and pepper up in a food processor.

Step 3. Form the mixture into patties and turn in a little flour.

Step 4. Fry in a pan until browned.

Serve with couscous salsa and a dollop of natural yoghurt.
