Baking this loaf was my first attempt at a sponge containing ground pistachios, and it will most definitely not be my last.
This is another recipe from the brilliant Homemade Memories cookbook by Kate Doran. The recipe has been reproduced here, but I do urge you to go and buy the book, I want to bake almost everything in it!
The result is a delicious texture cake and the lime zest adds a little citrus zing, without overpowering the pistachio. I’m a big fan of loaf cakes because of their simplicity but the topping on this one adds a bit of extra glamour. So… go bake it! Not much else to say.
